What’s Your Breakfast Routine?

I recently discovered overnight oats. I am a big fan! They are filling and nutritious. However, I have been making them as “10-minute morning oats” and eating them like muesli, or a similar cold cereal. This works, because I LOVE oats- raw or cooked or in a cookie! The extended school year that Chicago has is feeling especially hard for me as I approach my birthday (and what has always been the end of the school year for me) so I am treating myself to a more indulgent morning oatmeal.

Indulgent Oats

-1/2 cup whole raw oats
-1/2 – 3/4 cup almond milk
-a HEAPING spoonful of peanut butter
-loads of dark chocolate (I shave mine off a bar of this)
-Chopped banana, strawberry, and any other fruit that sounds good

Mix it all together, and let sit for oats to soften and flavors to meld. This might mean making it before your shower, or adding the ingredients slowly like me so it is ready to eat by the time you have finished shaving the chocolate in. Enjoy with coffee (or tea!)- don’t be deceived by my Intelligentsia mug, I am usually sipping Gevalia for half the price.

  2. I need to jump on the overnight oats bandwagon! I like oatmeal for breakfast but usually don’t have the time to make anything good and I am just running out the door with a crummy packet of insta oats.
